How to Make a Healthy Chicken and Broccoli Casserole
There is a simple assembly line technique, just like with many other baked chicken broccoli dishes. Put your ingredients in a casserole dish in layers and top with cheese. Or cover it in cheese, which is what occurs here, but you do you!
First, chop the crown of the broccoli into florets, which should be around four cups worth. Steam them quickly on the stove.
In the meantime, a big mixing dish holds the softened cream cheese, a dollop of mayo, and some spices. I just use garlic powder, salt, and pepper. This is designed to be family-friendly, so there’s no need to try out expensive, far-off spices.
Put in the grated cheese and the cut up cooked chicken. Doesn’t broccoli cheddar chicken casserole sound good? I agree. It’s cheddar.
Lastly, add the steamed broccoli and move the mixture to a casserole dish. This is covered in the cheddar cheese blanket stated above (please grate your own; the pre-shredded stuff is disgusting!) and then baked until it is creamy and tasty.

What You Need
- Four cups of broccoli florets
- 2 tablespoons of mayonnaise and 1/2 cup of melted cream cheese
- 1/2 cup of shredded cheddar
- 1/2 teaspoon of garlic powder
- 1/4 tsp salt from the sea
- 1/4 tsp of pepper
- 1 1/2 cups of cooked, chopped chicken
- 1/4 cup of shredded cheese for the casserole’s topping

Directions
- Set the oven to 375 degrees and grease a 9 × 9 casserole dish (I use avocado spray). Set it aside.
- Get your broccoli ready first. Put a big pot on the stove and fill it with about 2 inches of water. Add the broccoli florets to the water once it is boiling. Let them steam for about two minutes, or until a fork can easily go through them. Get rid of the water, put the broccoli back in the sauce pan, and set it aside.
- Mix the softened cream cheese and mayo together in a big bowl, then add the spices. Then add the cooked and diced chicken and the cheddar. Last, mix in the steamed broccoli and mix everything together.

- Put the chicken and broccoli mixture into the prepared casserole dish and top with the last 1/4 cup of shredded cheese.
- Put in the oven and bake for 15 minutes. Next, turn the oven to broil and broil for 2 to 3 minutes, or until the cheese is bubbling and starting to brown.
- Warm it up before serving.
You can keep leftovers in the fridge for up to three days if they are covered.
