With a cozy eggnog base and a burst of pineapple and coconut, it’s creamy, smooth, and just sweet enough to make it feel extra special.
This drink will definitely put some holiday cheer in your glass, whether you’re sitting by the fire or thinking of sandy beaches.
Ingredients

- ○ One cup of store-bought or homemade eggnog
- ○ 1/2 cup of coconut cream from a can
- ○ 1/2 cup of juice from a pineapple
- ○ 1/4 cup of white rum (optional for a kid-friendly drink)
- ○ 1/4 teaspoon of ground nutmeg (plus extra for garnish)
- ○ 1/4 cup of ice cubes
- ○ Flakes of toasted coconut (for garnish)
- ○ A wedge of pineapple (for garnish)
Tools
- Blender (not required)
- A cocktail shaker or a mason jar with a lid
- Spoons and cups for measuring
- Small frying pan (for toasting coconut)
- Serving glasses
Instructions
1. Put the coconut flakes in the oven:

In a small skillet, toast the coconut flakes over medium heat until they turn golden brown. Set aside to use as a garnish.
2. Combine the Ingredients:
Put eggnog, coconut cream, pineapple juice, rum, and nutmeg in a cocktail shaker. Put in the ice cubes and shake well until the mixture is frothy.
3. Pour and add a garnish:
Pour the mixture through a strainer into a glass that is already cold. Add toasted coconut flakes, a wedge of pineapple, and a small sprinkling of nutmeg to the top.
Tips & Variations
- Toast Your Coconut Flakes: Put your coconut in a dry skillet and toast it for a few minutes. It makes a big difference!
- Make It Kid-Friendly: Don’t add the rum; instead, serve it as a mocktail. It’s still great and everyone in the family will love it.
- Puree for Extra Frothiness: If you have a blender, put all the ingredients in and puree them till they are creamy and lovely.
- Chill Your Glasses: For that frosty look, put your glasses in the freezer for 10 minutes before serving.
- Sweeten It Up: If you want it sweeter, add a little simple syrup or more pineapple juice.
Substitutions & Serving Ideas
- No eggnog? Mix half-and-half with a little cinnamon and nutmeg.
- Coconut Milk as a Substitute: Coconut milk will work in a pinch, but it won’t be as creamy.
- Non-Alcoholic Version: Just leave out the rum and enjoy it as a mocktail for a tropical vacation.
- Extra Decadent: Top it with a dollop of whipped cream for a dessert-like finish.
Storage & Prep
You may mix the eggnog, coconut cream, and pineapple juice ahead of time and keep it in the fridge. Right before serving, shake or combine with ice and rum.
You should serve this cocktail right away, but you can keep the blended (non-ice) ingredients in the fridge for up to 24 hours. Before serving, just mix or blend it well.

There you are! A holiday drink (or non-alcoholic drink) that is both comfortable and tropical! You can drink this Eggnog Piña Colada at family gatherings, Christmas parties, or simply by yourself by the fire.
