Ingredients for Baked Ricotta Chicken

  • 2 pounds of chicken breast with no bones or skin
  • 16 ounces of ricotta cheese, or roughly 2 cups
  • One cup of chopped spinach
  • 1 cup of shredded mozzarella cheese (for other uses)
  • 1/2 cup grated parmesan cheese (for other uses)
  • Two cups of marinara sauce
  • 4 cloves of garlic, chopped (for different uses)
  • 1 teaspoon of Italian seasoning
  • Add salt and cracked black pepper to taste.

Preparation Steps

Mixing ricotta, garlic, seasoning, and spinach

  1. Set your oven to 400°F (200°C).
    Mix 1 cup of shredded mozzarella cheese and ½ cup of grated Parmesan cheese in a medium bowl, then put it aside.
    In a another bowl, whisk together 16 ounces of ricotta cheese, 2 cloves of minced garlic, and 1 teaspoon of Italian seasoning (or 1 tablespoon of Good Seasons Italian dressing mix).
    Stir until everything is fully mixed.
    Mix in 1 cup of chopped fresh baby spinach with the ricotta mixture.
    Mix half of the cheese mixture into the ricotta mixture until everything is well blended.
  2. Use olive oil or non-stick cooking spray to grease a 13×9-inch baking dish.
    Put a thin layer of marinara sauce on the bottom of the baking dish.
    Put the chicken breasts in the baking dish in a single layer. If you want, you can cut off any extra fat.
  3. Spread the rest of the minced garlic (2 cloves) over the chicken breasts.
    Add salt and cracked black pepper to taste.
    Spread the ricotta and spinach mixture evenly over the chicken breasts.
    Put marinara sauce all over the chicken and ricotta mixture.
  4. Put the chicken in the oven that has already been heated and bake it for about 20 minutes, or until the inside temperature reaches 160°F (70°C).
  5. Take the dish out of the oven and sprinkle the rest of the cheese mixture on top of the chicken.
    Put the casserole back in the oven and bake for a few more minutes, or until the cheese is melted and bubbling.
  6. Let the chicken sit for 5 to 10 minutes before you serve it.
