Blueberry Banana Bread with Crumb Topping

Ingredients

- ◯ 2 bananas that are ripe and mashed
- ◯ 1½ cups of flour for all purposes
- ◯ 1 teaspoon of baking soda
- ◯ ½ tsp of baking powder
- ◯ ½ teaspoon of salt
- ◯ ½ teaspoon of cinnamon
- ◯ ½ cup of sugar in granules
- ◯ ¼ cup of brown sugar
- ◯ 1 egg
- ◯ ⅓ cup of butter that has melted
- ◯ 1 tsp of vanilla extract
- ◯ ½ cup of milk
- ◯ 1 cup of fresh or frozen blueberries (if using frozen, don’t thaw them)
- ◯ 1/3 cup of all-purpose flour
- ◯ ¼ cup of brown sugar
- ◯ ½ teaspoon of cinnamon
- ◯ 3 tablespoons of chilled butter, cut into cubes
Instructions
- Use a fork to mash the bananas in a bowl until they are smooth.
- In another basin, mix the flour, baking soda, baking powder, salt, and cinnamon together using a whisk.
- In a another dish, mix the melted butter, brown sugar, granulated sugar, egg, vanilla extract, and milk until smooth.
- Mix the wet and dry ingredients together carefully, stirring only until they are all mixed together.
- Put some flour on the blueberries, then gently mix them into the batter.

- Mix the flour, brown sugar, and cinnamon together in a small bowl. Cut in the chilled butter until it is crumbly.
- Spread the batter evenly in a greased loaf pan and then sprinkle the crumb topping on top. Bake for 50 to 55 minutes at 350°F (175°C).
- Before moving the banana bread to a wire rack to cool fully, let it sit in the pan for 10 minutes.
Tips & Storage

- Use bananas that are quite ripe. The riper they are, the sweeter and tastier your bread will be.
- To keep the blueberries from sinking, toss them in a little flour before adding them to the batter.
- Don’t combine too much! For the fluffiest texture, mix the batter only until it is smooth.
- For a better crumbly texture, chill the crumb topping for 5 minutes before putting it on.
- Let the bread cool before cutting it so it stays together wonderfully!
- You can keep it at room temperature for two days or in the fridge for up to five days in a container that doesn’t let air in.
- You can freeze individual slices for up to three months. Just thaw them out and enjoy!
