Equipment:

  • Small pot
  • Whisk (normal or matcha)
  • Fork or muddler
  • Fine mesh strainer (optional, for a smoother blueberry purée)
  • A tall glass for serving

Ingredients:

  • ½ cup of blueberries, fresh or frozen
  • 1 tablespoon of honey (or maple syrup if you want a vegan version)
  • 1 tbsp of lemon juice
  • 2 tbsp of water
  • 1 tsp of matcha powder
  • ¼ cup of hot water (not boiling!)
  • 1 tsp honey (optional, for sweetness)
  • ½ cup of normal or lemon-flavored sparkling water
  • Cubes of ice
  • Blueberries that are fresh
  • Slice of lemon
  • A little dusting of matcha powder

Step 1 & 2: Make the Blueberry Layer

  1. Prepare the blueberries.
    Put the blueberries, honey, lemon juice, and water in a small saucepan over medium heat and cook for about 5 minutes, stirring until the berries break down.
  2. Strain (if you want to).
    To get rid of the skins and make the drink smooth, push the blueberry mixture through a fine mesh strainer. Let it cool down.

Step 3: Make the Matcha Layer

  1. Mix the matcha with a whisk.

  • Add sugar to taste. Change the amount of honey or maple syrup according on how tart you want it.
  • Do you want a creamier version? For a twist on a matcha latte, add a splash of oat milk or coconut milk.
  • Add a dash of almond or coconut milk to make it creamy and fizzy without dairy.
  • Use lemon sparkling water instead of plain water to make it taste more lemony.
  • Double the matcha for a stronger flavor that tastes more like the earth.
  • For a boozy twist, add a dash of gin or vodka!
  • The best way to enjoy it is fresh! If you leave the bubbles alone for too long, they will go away.
  • If you’re making it ahead of time, keep the blueberry puree and matcha mix separate and put them together when you’re ready to serve.
