You may serve them as an appetizer or make them for the kids as a light meal. This dish has broccoli in it for extra fiber, but you can easily use cauliflower instead. You may also use almond flour instead of breadcrumbs to make it keto-friendly.
Ingredients

- 1 1/2 pounds of chicken breasts or ground chicken
- 1 cup of Panko breadcrumbs
- 1 cup of coarsely chopped broccoli
- Two eggs
- 2 tablespoons of chopped dill
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 teaspoons of oil for frying
Instructions
- Put the 1 1/2 pound chicken breasts in a food processor after cutting them into pieces.
- For finely chopped chunks, pulse for about a minute; for coarsely ground meat, pulse for shorter time. Be cautious not to turn the meat into a paste. When you pinch the meat, it should stay together. You could also use ground chicken instead.
- Next, hold the broccoli with the stem facing up and carefully cut the florets apart with a sharp knife, making cuts down from the stem.
- Put a pot of water on the stove over medium-high heat and let it come to a boil. Put the 1 cup of finely chopped broccoli florets in a steam basket and put it on top of the boiling water when it starts to bubble.
- Put a lid on the pot and let the broccoli steam for 2 to 3 minutes. Take the broccoli off the stove and let it cool down after it’s done. Cut it up into little pieces.
- Put the ground chicken, broccoli, 1 cup of Panko breadcrumbs, 2 eggs, 2 tablespoons of chopped dill, 1/2 teaspoon of onion powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper in a bowl.

- Mix the ingredients together with your clean hands until they are all equally mixed. Put some oil on your hands and pinch off a portion of the beef mixture. Then, shape it into a tiny patty that is about 1/2 inch thick.
- Over medium heat, heat 2 teaspoons of oil in a nonstick skillet.
- Cook the patties for 3 to 4 minutes on each side, or until they are a lovely golden brown.
- Enjoy the fritters with your favorite dip!
