  • 15 ounce box of yellow cake mix
  • 2 eggs, beaten
  • 1/3 cup olive oil, or vegetable oil
  • 12 oz chocolate chips
  • Cooking spray

Directions

  1. Preheat the oven to 350 degrees.
  2. In a small bowl, beat the eggs.
  3. Add the cake mix and olive oil to the beaten eggs and mix well.

Mixing Dough for Cake Mix Cookie Bars

  1. The dough will be extremely thick, so add the chocolate chips and mix them in.
  2. Grease a 9 X 13 baking dish with cooking spray.
  3. Spread the batter evenly in the dish. It will take a few minutes to spread evenly because it is very thick and sticky. Use wet or greased hands or a rubber spatula to spread the batter into the dish. The batter is very thick and this will make it a little easier to spread!
  4. Bake the cookie bars at 350 degrees for 20 – 25 minutes, or until a toothpick inserted comes out clean.
  5. Once cooled, cut the cookie bars into squares.

If you’ve never made these before, you will be surprised at just how good they are!

These treats are rich like brownies and taste like chocolate chip cookies. They’re just so fun to eat and really satisfying and thick and chocolatey.

The batter will be thick and hard to spread (this is normal). I found that it was easier to spread into the pan with a spoon and a rubber spatula. It may take a couple minutes, but it’s so worth it! The size of the baking dish will determine how thick the cookie bars are.

If they last that long, you can keep leftover cake mix bars in an airtight container at room temperature for 3 to 4 days. Once cooled, store leftover cookie bars in an airtight container.
