This Cheesy Garlic Bread is so good that it will change your life
Once you make it my way, you’ll never make garlic bread any other way!It has a buttery, garlicky, cheesy, and crispy taste without being too heavy, which is how it should be.

What Makes This Garlic Bread Special
I know there are a lot of good garlic bread recipes out there (it’s hard to make bad garlic bread). But there are three things that set this garlic bread apart:
- Roast the garlic. First, you need to bake the garlic in olive oil until it turns golden, caramelized, and soft. This extra step makes the garlic taste and smell better, which makes the garlic bread taste a lot better!
- The bread is dipped in a custard made with garlic butter. A lot of garlic bread recipes call for spreading a mixture of garlic and butter on top of the bread. But not this one! You will make a garlic butter custard and dip the bread in it so that the flavor gets into the bread and isn’t just on the outside. This method is like the one used in Korean Cream Cheese Garlic Buns, and it works great!
- The bread is baked three times. First, you need to bake the bread to make it crispy. After that, you will make it by dipping it in the garlic butter custard. Finally, you will broil it with cheese on top. It sounds like it would take a long time, but it really doesn’t. The result is well worth it.
You can use any kind of bread you want. French bread, like baguettes, is used in traditional recipes, and it is cut in half. I like my garlic bread to be a little sweet, so I used King’s Hawaiian’s Original Hawaiian Sweet Rolls, which worked perfectly. You can use any kind of bread you want, as long as it comes in a loaf, log, or sheet. You can also make this cheesy garlic bread into individual rolls, which are great for serving!
Roasting Garlic
Roasting garlic in the oven is simple. You can do this in two ways:
- Put oil and salt on top of the whole garlic bulb and bake it upside down with one end cut off.
- Bake each clove of garlic separately.
I like the second way better because it takes less time. I bake peeled garlic cloves in olive oil and salt for about 20 minutes at 400F in a mini Dutch oven, until they are golden and soft. It is best to keep the garlic covered with foil or a lid so it doesn’t burn.
You can find the full recipe on the recipe card at the bottom of this post, but let’s go over the steps with pictures to help you picture them.
Preparation Steps

First, bake the garlic in the oven to roast it. Mix it up and put it away:
Cut the bread loaf in half and bake it for a few minutes, or until it is lightly crispy:
To make the garlic butter custard, mix together the mashed garlic, melted butter, an egg, milk, salt, paprika, and fresh parsley.

Put the bread loaf halves in a bigger pan and dip them in it, making sure they are completely covered:
Bake the bread that has been dipped for about 15 to 18 minutes:
Add shredded mozzarella cheese on top and broil until it melts and gets a little charred.

Cut it up, serve it, and enjoy!
Ingredients
- 8 to 10 cloves of garlic
- 2 tablespoons of olive oil
- A pinch of salt
- Garlic that has been roasted from above
- 113g of melted butter (½ cup)
- 1 egg
- 60g of milk in ¼ cup
- ½ tsp salt
- ½ teaspoon of paprika
- 2 tablespoons of chopped fresh parsley
- 12 King’s Hawaiian Original Hawaiian Sheet Rolls, kept in their full sheet form (or you can use a French baguette of the same size instead)
- 2 cups of shredded mozzarella cheese
- Chili flakes and chopped parsley for serving
Instructions
Garlic that has been roasted:
- Set the oven to 400F.
- Put the peeled garlic cloves in the olive oil and salt and mix them together. Put them in a small pot with a lid (or cover with foil) and bake for about 20 minutes, or until they are soft and golden.
- Mash with a fork and put it away.
Custard with Garlic Butter:
- Put the mashed roasted garlic, melted butter, egg, milk, salt, paprika, and parsley in a bowl.
- Whisk well to mix
Assembly:
- After roasting the garlic, turn the oven up to 350F.
- Cut the sheet of bread rolls in half with a sharp knife, as shown in the pictures above. Put on a big baking sheet and bake for 8 to 10 minutes, or until the edges are light golden and crispy.
- Put the garlic butter custard in a bigger pan. Carefully dip the baked bread sheets or loaves into the garlic butter custard, making sure that all sides are well covered.
- Put the bread back on the baking sheet and bake it at 350F for 15 to 18 minutes, or until it is golden brown.
- Put the shredded mozzarella cheese on top of the bread. Set the oven to broil/grill and broil for about five minutes, or until the cheese is melted and golden.
- Garnish with fresh parsley and chili flakes. Cut it up, serve it, and enjoy!
