Cherry Vanilla Fudge

This Cherry Vanilla Fudge is creamy, delicious, and full of sweet cherry flavor. It has a thick vanilla fudge foundation, cherry flavor swirls, and small pieces of luscious cherries in every piece.

Ingredients

- 2 cups of white chocolate chips
- 1 can (14 oz) of sweetened condensed milk
- 1 tsp of vanilla extract
- ½ cup of chopped maraschino cherries that have been patted dry
- 1 tablespoon of maraschino cherry juice
- 1/2 cup of little marshmallows
- ¼ teaspoon of salt
Equipment
- A medium-sized pot
- A spatula
- Baking dish that is 8 by 8 inches
- Paper for parchment
- Cutting knife
Preparation Steps
- Melt the chocolate.
Put white chocolate chips and sweetened condensed milk in a saucepan over low heat and whisk them regularly until they are smooth. Take it off the fire and mix in the vanilla and salt. - Add the marshmallows and cherries and mix them in.
Mix in the small marshmallows and chopped cherries until they are all mixed up.

- Mix in the cherry juice.
Add 1 tablespoon of cherry juice and gently stir with a knife. Don’t mix too much! - Put it in the pan.
Put parchment paper on the bottom of an 8×8-inch baking dish, then evenly distribute the fudge on top. - Cool down and set.
Put it in the fridge for at least two hours or until it is solid. - Cut and serve.
After the fudge has hardened, use the parchment paper to lift it out. Cut it into squares and, if you want to be fancy, add extra cherry bits or a drizzle of white chocolate.
Tips for the Best Fudge
- Make sure the cherries are completely dry! To keep the fudge from getting too soft, pat it with paper towels.
- Slowly melt the chocolate. Stir white chocolate all the time and use low heat to keep it from burning.
- Let it sit all the way. For the greatest texture, chill for at least two hours before cutting.
- Gently stir in the cherry juice. If you want those nice red stripes, don’t mix too much!
- Put as many toppings on as you can. For more taste, drizzle white chocolate on top or add more chopped cherries.

- A sweeter version: Add a little honey or caramel sauce to the mix.
- You may keep it in the fridge for up to a week in an airtight container.
- Want to keep it for a longer time? You can freeze the fudge for up to three months. Before serving, let it thaw.
