  • Blueberries that have been frozen

1. Step 1: Mix and cool

Put the lite coconut milk, water, vanilla extract, and chia seeds in a big mixing bowl first. Then, blend them all together until they are smooth.

Coconut Milk with Light vs. Full Fat

Light coconut milk and full-fat coconut milk are basically the same thing. To make light coconut milk thinner and lower in calories, more water is added to it. For this dairy-free chia pudding, I use light coconut milk to get the right texture.

This chia seed pudding with coconut milk recipe works with full-fat coconut milk. To get the right consistency for chia pudding, add 1/2 cup of water to the coconut milk.

Changes to the ingredients

Almond milk can be used instead of coconut milk in this chia pudding recipe, but coconut milk makes the pudding the best. If you want a thicker texture, I suggest using almond or hazelnut milk creamer.

You can use any frozen berry instead of the frozen blueberries. I like to make a really tasty compote with frozen berries and cherries. This strawberry chia seed pudding is great if you like strawberries.

This recipe for coconut chia pudding doesn’t have any sugar in it on purpose, but you can add maple syrup and vanilla to make it sweeter.

Why don’t my chia seeds look like yours?

For this chia pudding recipe, you can use either black or white chia seeds.
