The Blueberry Coffee Cake

The Blueberry Coffee Cake is one of my favorite desserts to bring to parties, brunches, and other events where I want to impress my friends and family with a quick and tasty treat.
Everyone loves this cake because it has fresh blueberries and a soft, moist cake.
I added vanilla extract to this recipe to make it taste better. It smells sweet, which goes well with the blueberries and makes each bite taste better and richer.
Ingredients

Cake:
- 2 cups of Bisquick baking mix
- Two eggs
- 3/4 cup milk (regular or buttermilk)
- 1/2 cup of sour cream
- 1/4 cup of sugar
- 1 teaspoon vanilla extract
- 3 tablespoons of melted salted butter
- 1 cup fresh blueberries
Streusel:
- 1/2 cup brown sugar
- 2/3 cup of Bisquick baking mix
- 1/4 cup salted butter (cold, cut into small pieces)
- 1/2 teaspoon of ground cinnamon
Preparation Steps
1. Preheat your oven
To start, turn your oven to 375°F (190°C) so it can warm up while you make the cake. This temperature is just right for baking our blueberry coffee cake to a golden perfection.
Next, take a 9×9-inch square baking pan and either grease it well or line it with parchment paper. This step keeps your cake from sticking to the pan, which makes it easier to take out and serve.
Now, you’re all set to start mixing your ingredients!
2. Get the cake batter ready
To begin, break two eggs into a mixing bowl and add half a cup of sugar. Stir these together until they are well mixed.
After that, add 1 teaspoon of vanilla extract and 3 tablespoons of melted salted butter. Mix it all together again.
Now, add 3/4 cup of milk (you can use regular milk or buttermilk) and mix until everything is well mixed.
Slowly mix in 1 1/2 cups of Bisquick baking mix. Add the first cup, mix gently, and then add the rest.

Then, slowly stir in 1 cup of blueberries. Don’t mix too much; just stir until everything is mixed.
Then, put the batter that you made into the greased or lined 9×9-inch square baking pan.
3. Get the streusel toppings ready and put them on top of the batter.
Mix together in a small bowl:
- ½ cup of brown sugar
- ⅔ cup of Bisquick baking mix
- ¼ cup of cold salted butter pieces
- 1/2 teaspoon of ground cinnamon.
Cut the cold butter into the mixture with a fork or a pastry cutter until it is crumbly. This will give your streusel the right texture.
When your streusel is done, spread it out evenly over the top of the cake batter. Don’t push it in; it should just sit on top of the batter.
This will give you a tasty, crumbly topping after it bakes.
4. Make the cake
Put your cake in the oven that has already been heated and bake it for about 35 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for at least 10 minutes after it has been baked. This makes it easier to cut and helps it set.

Ingredients:
- 1 cup of sugar in powder form

- 2 tablespoons of brown sugar

Sprinkle the mixture over the cake batter before baking for a crunchy, nutty topping.

- 1/4 cup of chopped pecans
