Lemon Fudge

Ingredients

- 2 cups of white chocolate chips
- One can of sweetened condensed milk (14 ounces)
- 2 tablespoons of melted unsalted butter
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of lemon zest (plus more for decoration)
- 1/2 teaspoon of vanilla extract
- A little bit of salt
- Extra lemon zest or white chocolate drizzle on top is optional.

Instructions

Melt the chocolate.
Put the white chocolate chips, sweetened condensed milk, and butter in a saucepan over low heat. Stir them continually until they are smooth. -
Add salt, lemon juice, zest, and vanilla.
Take it off the heat and mix in the lemon juice, lemon zest, vanilla essence, and salt until everything is well mixed.

Put it in the pan.
Put parchment paper in an 8×8-inch baking dish, and then spread the fudge out evenly. -
If you want, add toppings.
Add more lemon zest or melted white chocolate over top for more flavor. -
Let it cool down and set.
Put in the fridge for at least two hours or until firm. -
Cut and serve.
Once the fudge has set, use the parchment paper to take it out, cut it into squares, and enjoy!

Tips for Best Results
- Use lemons that are still fresh. Juice from a bottle won’t taste as fresh and tangy.
- Slowly melt the chocolate. Keep the heat low since white chocolate burns readily.
- Let it sit all the way through. You should wait at least two hours before cutting it.
- Put parchment paper on the bottom of the pan. It makes it so much simpler to lift the fudge out.
- Make it seem nice! Before putting it in the fridge, drizzle melted white chocolate on top or add more zest.
