Maple Walnut Fudge

Ingredients

- Two cups of sugar that has been ground
- ½ cup of heavy cream
- ½ cup of authentic maple syrup
- ½ cup of butter without salt
- 1 teaspoon of vanilla extract
- 1 cup of chopped walnuts (plus more for decoration)

- A medium-sized pot
- A spatula or wooden spoon that can handle heat
- Candy thermometer (not required, but handy!)
- 8 by 8 inch baking pan
- Paper made with parchment
Instructions
1. Mix the ingredients together.
Put the sugar, heavy cream, maple syrup, and butter in a medium pot. Stirring continually, heat the liquid over medium heat until it starts to boil gently.
2. Cook till the right temperature
If you’re using a pot, attach a candy thermometer to it and keep heating, stirring often, until the mixture reaches 235°F (soft-ball stage). If you don’t have a thermometer, heat the mixture for 8 to 10 minutes, or until it thickens and pulls away from the sides of the pan a little.
3. Add the walnuts and vanilla.

Take the pot off the heat and mix in the vanilla essence. Let the mixture cool for about 5 minutes, and then stir in the chopped walnuts.
4. Put it in the pan
Put the fudge mix in an 8×8-inch baking sheet that has parchment paper on the bottom. Use a spatula to spread it out evenly, and if you want, add more chopped walnuts on top.
5. Cool Down and Set
Put the pan in the fridge and allow the fudge set for at least two or three hours, or until it is totally hard.
6. Cut and serve
Use the parchment paper to remove the fudge out of the pan once it has set. Use a sharp knife to cut into squares and serve!
Tips for Perfect Maple Walnut Fudge
- Use real maple syrup. There are no substitutes for pure maple syrup in this fudge; it makes all the difference.
- Be patient. Stir the mixture all the time and keep the heat low to medium to keep it from burning.
- Get your pan ready. Put parchment paper on the bottom of the pan so you can easily remove the fudge out after it hardens.
- A candy thermometer is helpful. It isn’t necessary, but it makes sure you get the appropriate temperature for nicely set fudge.
- Let it cool all the way down. Before cutting the fudge, put it in the fridge so it can harden. This will make the squares look the best and cleanest.

- If you don’t want nuts, leave out the walnuts or use crumbled pretzels instead for some crunch.
- For a decorative touch, drizzle melted white chocolate over the top.
- Dairy-free: Use vegan butter and coconut cream instead of dairy.

- In the fridge, fudge can last for up to two weeks in an airtight container.
