Cheesy Meat & Potato Skillet

Ingredients for Four Servings

- ( ) 1 pound of ground beef, turkey, chicken, or pork
- ( ) 3 medium potatoes, peeled and cut into cubes; 1 onion, chopped; 1 bell pepper, chopped
- ( ) Two cloves of minced garlic
- ( ) 1 teaspoon of paprika
- ( ) 1/2 teaspoon of onion powder
- ( ) ½ teaspoon of garlic powder
- ( ) ½ tsp salt
- ( ) ¼ tsp black pepper
- ( ) 1 cup of beef or chicken broth
- ( ) One cup of shredded cheddar cheese (or your favorite kind)
- ( ) 1 tbsp of olive oil
- ( ) Fresh parsley to put on top
Instructions
- Put olive oil in a pan and heat it. Add diced potatoes and cook until lightly browned and starting to soften, about 8–10 minutes. Put aside.
- In the same pan, sauté the ground meat with the onion until it is no longer pink, about 5 to 7 minutes. If necessary, drain out extra fat.
- Add bell pepper, garlic, and seasonings. Cook until the food is mushy and smells good.

- Put the potatoes back in the pan, add the stock, cover, and let them cook for 5 minutes, or until they are soft.
- Add shredded cheddar on top, cover it, and let it melt into a golden, bubbling coating.
- Add parsley as a garnish and eat it right out of the skillet.
Tips & Variations
- For a creamier cheese pull, use mozzarella or Monterey Jack instead.
- Add more veggies, such as mushrooms, zucchini, or spinach.
- Add some heat with chili flakes, jalapeños, or a little spicy sauce.
- Put a fried egg on top of each plate for a brunch feel.
