This Pink Coconut Iced Latte is a great drink. It’s fun, refreshing, and just sweet enough. It has a lovely soft pink color, is creamy and coconutty, and is almost too nice to drink (but trust me, you will!).
This one is sure to impress, whether you’re treating yourself to a noon pick-me-up or pouring drinks for friends.
Let’s do it!
Things you’ll need:

- Coffee maker or espresso machine
- Tall cup or glass
- A little whisk or spoon for combining
- One shot of espresso (approximately 1 ounce) or half a cup of strong brewed coffee
- 3/4 cup coconut milk (from a can or carton, sweetened or not)
- 1 to 2 teaspoons of beet juice or pink food coloring (to make it look nice pink)
- 1 to 2 teaspoons of sugar or honey (optional, for sweetness)
- Cubes of ice
- Optional: Toasted coconut flakes for garnish
Making a Pink Coconut Iced Latte:
- Make the coffee
Make a shot of espresso or half a cup of strong coffee and let it cool. -

Combine the Pink Coconut Milk
Mix 3/4 cup of coconut milk with 1–2 teaspoons of beet juice (or pink food coloring) and 1–2 teaspoons of honey or sugar (if using) in a small pitcher or bowl. Mix until everything is mixed together. - Put ice in the glass
Put ice cubes in a large glass. - Put in the pink coconut milk.
Fill the glass roughly three-quarters of the way with the pink coconut milk. - Put in the coffee
Pour the espresso slowly over the back of a spoon to make a lovely tiered look. - Add a garnish and serve
If you want, you may top it with a sprinkle of toasted coconut flakes and serve right away. Have fun!

Helpful Hints:
- If you want a creamier, richer latte, use canned coconut milk. If you want a lighter latte, use carton coconut milk.
- Beet juice produces a natural pink hue without changing the taste. You only need a tiny bit!
- For an even colder and more refreshing drink, chill your coffee and coconut milk ahead of time.
Changes and Replacements:
- No juice from beets? Instead, use a drop or two of pink food coloring.
- No coconut milk? For a similar taste, try almond milk or oat milk with a drop of coconut essence.
- Want it to be sweeter? Add extra sugar, honey, or even a little vanilla syrup.
You can combine the pink coconut milk ahead of time and keep it in the fridge for up to three days. Just give it a shake before you use it!
