These cinnamon rolls don’t have any refined sugars in them, and they use less butter than most bakery cinnamon rolls.

They taste like they just came out of the oven, even though they don’t have any sugar in them.

Things you need

Ingredients for Banana Bread Cinnamon Rolls

  • 210 g of flour (higher protein flour, all-purpose flour, or bread flour) and 40 g of protein powder (vanilla works best)
  • 2 tsp flour; leave this out if you are using self-raising flour.
  • 20–30 g of a zero-calorie granulated sweetener like Natvia, stevia, monkfruit, or something similar, or regular white or brown sugar.
  • 130–150 g of yogurt, either protein yogurt or Greek yogurt, vanilla or plain
  • 1 mashed ripe banana
  • 1 teaspoon of vanilla extract

Filling with cinnamon

  • 25 g of light butter instead of regular or vegan butter.
  • 30–40 g of a zero-calorie granulated sweetener like Natvia, stevia, monkfruit, or something similar can be used instead of regular white or brown sugar.
  • 2 to 3 teaspoons of cinnamon

Drizzle of Peanut Butter

  • 15 g of peanut butter powder or regular smooth peanut butter
  • 15 grams of powdered sugar; use monkfruit to keep it free of refined sugar.
  • 1–2 tablespoons of milk, soy, almond, or other types

You can use self-rising, all-purpose, or bread flour. I use Vetta’s smart flour from Australia, which has twice as much protein as regular flour.

Baking powder: You don’t need baking powder if you’re using self-raising flour.
Zero Calorie Granulated Sweetener: I use Natvia’s zero-calorie natural sweetener instead of regular brown or white sugar.
Greek Yogurt/Protein Yogurt: I use YoPRO Vanilla Protein Yogurt, but plain yogurt will work too.
Banana: This is what gives the banana bread its taste and texture.
Vanilla for taste
You can use regular butter or vegan butter instead of light butter.
Cinnamon is very important, so don’t skip it.
Peanut Butter Powder: I use MacroMike’s powdered peanut butter. Can use regular peanut butter
I use a monkfruit alternative for icing and powdered sugar, but you can use regular powdered sugar.
I use soy milk for the drizzle, but any kind of milk will do.

Advice

  • Moisture is very important because these cinnamon rolls don’t have any yeast in them. Add 1 teaspoon of extra yogurt at a time if the dough is too dry. Add 1 teaspoon of extra flour at a time if it is too wet.
  • Don’t forget to rest: You don’t need yeast, but letting the dough sit for a short time can make your cinnamon rolls taste and feel better. After you make the dough, let it sit for 10 to 20 minutes before rolling it out.
  • Use parchment paper: Line the baking pan with parchment paper so that the cinnamon rolls don’t stick to it. This will make it easier to take the rolls out of the oven and clean up afterward.
  • Give each cinnamon roll on the baking pan some space. They will get bigger as they bake, so make sure they have enough room so they don’t stick together and bake evenly.

How

  1. Set the oven to 180°C (350°F).
  2. Mix the flour, protein powder, baking powder, and granulated sweetener together in a medium bowl.
  3. Mix the dry ingredients with the yogurt, mashed banana, and vanilla extract. Mix well until the dough comes together.

  1. Knead the dough for 1 to 3 minutes after it is well mixed to make the gluten.
  2. Let the dough rest for 5 to 10 minutes after covering it.
  3. On a surface that has been lightly floured, roll out the dough into a big rectangle. It should be about 1/4 inch thick.
  4. To make the filling, mix the light butter, granulated sweetener, and cinnamon together in a small bowl. Evenly spread the cinnamon sugar filling over the dough that has been rolled out.
  5. Cut the dough into 7 to 8 strips that go up and down. To make cinnamon rolls, roll each strip up tightly. With your hands or a spatula, gently flatten each roll.
  6. Put the cinnamon rolls in a baking dish that has been greased or on a baking sheet that has been lined. Put the rolls in the preheated oven and bake them for 22 to 25 minutes, or until they are golden brown and done.
  7. Mix the peanut butter powder, icing sugar, and milk in a bowl until they are smooth and creamy. Change the amount of milk to get the right consistency.
  8. Take the cinnamon rolls out of the oven when they are done and let them cool for a few minutes. Pour the peanut butter mixture over the cinnamon rolls. If you want, you can add chopped peanuts for more texture.
  9. Let the rolls cool for 5 to 10 more minutes before serving and enjoying!

How to keep Banana Bread Cinnamon Rolls safe

At room temperature, you can keep it in ziplock bags or an airtight container for up to two days.
In the fridge, you can keep it in ziplock bags or an airtight container for up to five days.
To reheat, put it in the microwave for a few seconds or in the air fryer at 160C for 5 to 10 minutes. Change the times based on whether they are kept in the fridge or at room temperature.
