Ricotta Pancakes Recipe

The secret to making the best pancakes is ricotta cheese!
I wanted to make syrniki (Russian farmer’s cheese pancakes), but I didn’t have the right kind of farmer’s cheese. I was set on making something that was at least somewhat similar, so I went to the grocery shop and came home with ricotta cheese.
It was a big hit to make pancakes using ricotta cheese! When you bite into these pancakes, they initially crunch, then they turn into a warm, creamy filling that tastes like cheesecake.
Ingredients
- 900 grams of whole milk ricotta cheese (approximately 4 cups)
- One egg
- 1/2 to 3/4 cup of granulated sugar
- 1 1/2 cups of all-purpose flour and extra for shaping the ricotta pancakes
- 1/2 tsp. baking powder
- 1 tsp. vanilla extract (optional)
- oil for frying (I use olive oil)
Instructions

- Mix 32 oz of ricotta cheese with 1 egg until the egg is well mixed in (if using vanilla, add 1 tsp of vanilla with the egg). Then, add 1/2 to 3/4 cup of sugar and mix again. Finally, add 1½ cups of flour and 1/2 tsp of baking powder and mix everything together until it is a smooth mass.
- Put the mixture in a tablespoon or a big ice cream scoop, then drop it into the flour. Cover the ball with flour, then gently shape it into a patty that is approximately 1/2 inch thick. You can shape them all and then fry the ricotta pancakes, or you can shape enough to fill the pan and keep shaping the rest while they fry.

- Put about a tablespoon of oil in a skillet and heat it over low to medium heat to fry the pancakes. Put the ricotta pancakes in, cover them with a lid, and fry them for 2 to 3 minutes on each side, or until they are golden brown on both sides.
Serving Suggestions
Serve syrniki warm with a side of sour cream, your favorite jam, or this homemade Cherry Pie Filling.
To prepare the topping using sour cream: Add a little sugar to sour cream to make it taste a little sweet. Add sugar to taste. I use about half a cup of sour cream and one to two tablespoons of sugar.
