Rotisserie Chicken Casserole Recipe

Ingredients

- 2 cups of shredded chicken that has been cooked
- Pepper
- Salt
- Onion and herb seasoning from Mrs. Dash
- Stuffing mix for the stove
- Boiling water (as directed on stuffing mix package)
- 2 cans of cream of chicken soup
- 1/4 cup of milk
- Foil made of aluminum
- Cooking spray that doesn’t stick
Directions
1. Preheat and Prepare Chicken Layer
Set your oven to 350°F (175°C).
Spray a 13×9 glass baking dish with nonstick cooking spray.
Spread 2 cups of shredded, cooked chicken equally over the bottom of the baking dish.
Add Mrs. to the chicken along with salt and pepper. Add flavor with onion and herb seasoning.
2. Prepare Stuffing Mix

Follow the directions on the package to make the stovetop stuffing mix.
Put the stuffing mix and boiling water in a basin and stir until everything is well mixed.
Put the stuffing mixture in the microwave on high for 5 to 6 minutes. Let it sit in the microwave to steam for the best texture.
3. Prepare Soup Mixture
Put 2 cans of cream of chicken soup (ideally fat-free) and ¼ cup of milk in a big bowl and mix them together.
Mix the ingredients together until they are all the same.
Put the soup mixture over the shredded chicken in the baking dish.
Spread the soup mixture evenly over the chicken layer using a spatula.
4. Layer and Bake
Spread the prepared stuffing mix equally over the chicken layer that is covered in soup on top of the dish.
Put aluminum foil over the casserole dish and bake it in the oven that has already been prepared for 20 minutes.
After this, take off the foil and bake for another 10 minutes without it to let the top become a little crunchy.
5. Cooling and Serving
Carefully take the dish out of the oven once it has finished baking.
Let the casserole cool for 5 to 10 minutes before serving. This helps the layers firm and makes the flavor better.

Ideas for Replacing Ingredients
For vegetarian options, you can use cooked turkey, diced firm tofu, or chickpeas instead of cooked shredded chicken. These other options have about the same amount of protein and can take on flavors nicely. You can change the flavor for tofu or chickpeas as needed. You can use homemade bread cubes seasoned with herbs instead of stovetop stuffing mix for a fresher taste and more control over the ingredients. To make the stuffing taste like stuffing, use roughly 4 cups of cubed bread and add chicken seasoning. You may make a vegetarian version by using cream of mushroom soup instead of cream of chicken soup, or a lower-sodium version by making a white sauce from vegetable broth, flour, and milk. If you’re using homemade sauce, change the amount of liquid to keep the casserole at the proper consistency.
