These Easy Rotisserie Chicken Tacos are a simple and tasty supper for a weeknight, and they’re also a fantastic way to feed a lot of people at your next game day party.

This Easy Rotisserie Chicken Tacos recipe makes taco night a lot easier and tastier! This is a terrific way to feed a lot of people, including your family and friends who come over to watch the game.
How do you prepare tacos using rotisserie chicken that are easy?

We took a pre-cooked rotisserie chicken, took the meat off the bones, and shredded it.
Next, we mixed together salsa (you can make your own or use your favorite jarred kind), water, tomato paste, and spices like chili powder, coriander, and cumin. Then we added the shredded chicken.
After that, we put corn tortillas on a baking pan and coated them with oil on both sides. Putting the shredded chicken and shredded pepper jack cheese on top of the tortillas and then putting them in the oven to start cooking the tortillas and melting the cheese.
Take the pan out of the oven when the edges start to become golden brown. Then, put the shredded lettuce on top.
Then, fold each tortilla in half and place them in a baking dish. Top them with grated Monterey jack cheese. Put the tortillas back in the oven for just long enough for the cheese to melt and the tortillas to finish cooking.
Ingredients
- 2 cups of salsa (you can use our homemade recipe or your favorite jarred salsa)
- 1 cup of water
- Two teaspoons of tomato paste
- 1/2 teaspoon of coriander
- 1 teaspoon of chili powder
- 1 teaspoon of ground cumin
- 1 small rotisserie chicken, with the meat taken off the bones (you’ll need around 1 1/2 pounds of chosen chicken meat)
- 6 tablespoons of vegetable oil
- 12 6-inch white or yellow corn tortillas
- Shredded 8 ounces of pepper jack cheese
- Four cups of shredded iceberg lettuce
- 8 oz Shredded Monterey Jack cheese
- Black olives cut into slices
- Pickled jalapenos cut into pieces
- Red onion cut into thin slices
- Wedges of avocado
- Creamy sour
- Juice from limes
- Fresh cilantro
Instructions
- Set the oven to 450 degrees F.
- Get a roasting pan with high sides ready that can contain 12 folded tacos (or two pans with 6 each).
- Put salsa, water, and tomato paste in a big skillet. Set the flame to medium, swirl, and mix.
- Stir in the cumin, chili powder, and coriander.
- Add the shredded cooked chicken to the salsa mixture and heat it up until it’s hot. Then, keep it warm.

- Use half of the oil to brush two sheet pans. Put six corn tortillas on each tray and brush the tops with the remaining half of the oil.
- Put the pepper jack on each of the 12 tortillas.
- Put the warm chicken mixture on top of the pepper jack on each of the 12 tortillas, but not all the way to the edges.
- Put in the oven for 12 to 15 minutes, or until the edges start to get a bit crispy and the mixture is hot and bubbly. For consistent browning, turn the pans halfway through.
- Take one skillet out of the oven at a time and quickly add half of the lettuce on top. Then, take each tortilla, fold it in half, and put it in the dish or pan you set aside. Let each taco stay folded by leaning against the one next to it or the side of the pan. Once you fold them heated, they will stay this way. Do the same thing on the second pan. Shut off the oven. (Please note that tacos are hot, so we recommend using tongs to take them out and fold them.)
- Then, put the Monterey jack cheese on top of the 12 folded tacos and put them back in the oven for 4–5 minutes with the oven off. The leftover heat will melt the jack cheese on top of the lettuce.
- Serve hot with any toppings you like, such as sliced black olives, pickled jalapenos, thinly sliced red onion, avocado wedges, sour cream, lime juice, fresh cilantro, and so on.

Additional Tips and Variations
We used shredded cooked chicken to make these Easy Rotisserie Chicken Tacos, but you could also use cooked mince beef, pulled pork, seafood, or any other taco filling you like.
You may also add your favorite toppings to these Easy Rotisserie Chicken Tacos. We gave them black olives, pickled jalapenos, sliced red onion, avocado wedges, sour cream, lime juice, and cilantro.Other tasty choices include guacamole, additional salsa, this great red chile sauce, or a cheesy queso.
