Ingredients

Ingredients for vanilla mousse with cottage cheese

  • ( ) 1 cup of cottage cheese, either full-fat or low-fat
  • ( ) 2 tablespoons of honey or maple syrup
  • ( ) 1 teaspoon of vanilla extract
  • ( ) ¼ cup of heavy cream (or Greek yogurt for a lighter version)
  • ( ) ½ tsp lemon zest (optional, for a fresh taste)
  • ( ) Fresh berries to put on top
  • ( ) Extra honey for drizzling

Tools Needed

  • A blender or a food processor
  • A bowl for mixing
  • Hand mixer (if you’re using heavy cream)
  • Spatula
  • Spoons and cups for measuring
  • Small bowls or dessert cups

Instructions

  1. Mix the cottage cheese
Put the cottage cheese in a food processor or blender. Mix for about 30 seconds to a minute, or until the mixture is completely smooth.
  2. Add some vanilla and sweetener
Add the vanilla extract and honey (or maple syrup) to the mix. Blend again for a few seconds, or until everything is mixed together.

Mixing cottage cheese with vanilla and honey

  1. Whip the cream until it is thick.
Using a hand mixer, whip the heavy cream in a mixing bowl until soft peaks form. If you are using Greek yogurt, you can skip this step.
  2. Put everything together.
Using a spatula, gently fold the whipped cream (or Greek yogurt) into the blended cottage cheese mixture. If you’re using lemon zest, add it now.
  3. Serve and top it off
Put the mousse in dessert cups and top them with fresh berries and a little honey. You can eat it right away or put it in the fridge for 30 minutes to make it even better.

Tips & Variations

  • ✖️ Blend it smooth: If you don’t like how cottage cheese feels, blend it really well to make it smooth.
  • Let it sit in the fridge: Let it sit in the fridge for 30 minutes before serving to make the flavors even better.
  • Change the sweetness: Taste it before serving and add more honey if you need to.
  • Make it kid-friendly: Kids love it when you put chocolate chips or crushed graham crackers on top!
  • Use a piping bag: Instead of spooning it in, pipe it into dessert glasses for a fancier look.

Additional Notes

  • 🌿 If you don’t want to eat dairy, you can use yogurt that doesn’t have dairy instead of cottage cheese and coconut cream instead of heavy cream.
  • Chocolate version: Add 1 tablespoon of cocoa powder and a few chocolate chips.
  • Fruity twist: Add a handful of fresh or frozen berries to the mousse to give it a flavor.
  • For extra crunch: Crush graham crackers or Oreos on top.
  • You can mix everything together ahead of time and keep it in the fridge for up to two days in a container that doesn’t let air in.
  • Whipped cream can lose its air over time, so if you want it to be as fluffy as possible, fold it in right before serving.
  • In the fridge, keep it in a sealed container for up to two days.
  • Freezer: Freeze in small containers for up to a month. It will turn into a frozen treat that tastes like mousse!
