Rice Balls with Vegetables

These veggie rice balls are tasty, have a lot of texture, and fill you up. They’re a great snack or meal for youngsters and/or toddlers. A terrific way to eat more vegetables!
These vegetable rice balls taste great and have a crunchy outside and a soft inside. I like to make them for my toddler to help her eat more vegetables. I think the white cheddar cheese and garlic powder make them taste so good. Making the rice balls is the hard part, but putting them together is easy! You may make rice balls with cooked white rice, steaming vegetables, an egg, cheese, garlic powder, and salt. You mix the ingredients and shape them into small rice balls to bake. You and your kids can eat them as a snack or even dinner. I hope you like this dish as much as my family and I do!
Ingredients

You will need steamed carrots and broccoli (you may use any sort of vegetables you want), a whole egg, white cheddar cheese (you can use any cheese you want), garlic powder, salt, pepper, and cooked white rice.
I made this dish just for my toddler. This dish is great for getting more vegetables into my toddler’s diet, which I always want to do. These rice balls are tasty, easy to eat, and good for you! You can give this to kids that are at least 7 months old.
- 1/2 cup of steamed carrots
- 1/2 cup of broccoli that has been steamed
- 1 full egg, beaten lightly
- 1/2 cup of white cheddar cheese that has just been grated
- 1/2 teaspoon of garlic powder
- 1 teaspoon of salt
- Freshly cracked black pepper to taste
- 2 cups of white rice that has been cooked
Preparation Instructions

- Set out a large baking sheet and preheat your oven to 350 degrees.
- Put the cooked broccoli and carrots in a wide bowl or shallow dish and use a fork or potato masher to mash them up. Mash until there are only little pieces left.
- Put in your cheese, egg, garlic powder, salt, and pepper. Combine everything by mixing it all together (see pictures above).
- Now add the rice and mix it in with the vegetables using your hands.
- Use your hands to shape the rice into balls and put them on the baking sheet. I prefer to use a cookie scoop to make the balls of the same size. I use a 1 tablespoon cookie scoop. That scoop helped me make 30 balls! You can make them twice as big and obtain 12 to 17 balls, depending on how big you create them. * Look at the notes.
- Bake for 25 to 27 minutes at 350 degrees, or until golden brown. Let them cool for a few minutes, and then you can start serving and enjoying!

Additional Information
You can keep it in the fridge in an airtight jar for up to three days. Have fun! 🙂
* Make sure that the rice balls are tightly packed and won’t break apart when you make them. Rice balls that weren’t shaped well had come apart while they were baking.
