This whipped cottage cheese with dragon fruit is smooth, creamy, and full of protein!

- A food processor or blender

- ○ 1 cup of cottage cheese
- ○ ½ cup of chopped dragon fruit (pitaya), fresh or frozen
- ○ 1 tablespoon of honey or maple syrup
- ○ ½ teaspoon of vanilla extract
- ○ 1 tablespoon of milk (optional, for more creaminess)
- ○ Toppings: optional extra cubes of dragon fruit, granola, or coconut flakes

Instructions
Step 1: Put everything in a blender.
Put 1 cup of cottage cheese, 1/2 cup of dragon fruit, 1 tablespoon of honey, 1/2 teaspoon of vanilla essence, and 1 tablespoon of milk (if using) into a blender or food processor.

Step 2: Mix until smooth and fluffy.
Blend on high speed for 30 to 45 seconds, or until the mixture is smooth, creamy, and light. If you need to, scrape the sides and blend again.
Step 3: Add toppings and serve.
Put the whipped cottage cheese in a bowl and, if you want, add more dragon fruit cubes, granola, or coconut flakes on top.
Tips & Variations
- For the creamiest texture, use full-fat cottage cheese. Low-fat versions will work, but they won’t be as rich.
- ✔️ Frozen dragon fruit mixes well and makes the concoction thicker and colder.
- If you want it really smooth, blend it for 30 to 45 seconds longer.
- You get to choose how sweet it is! If you want it sweeter, taste it and add more honey.
- ✔️ Add a scoop of vanilla protein powder to get more protein.
- ✨ You can use strawberries, mango, or blueberries instead of dragon fruit.
- ✨ For a slightly different texture, use Greek yogurt instead of cottage cheese.
- ✨ For a variation with less sugar, leave off the honey.
- ✨ For more fiber, add chia seeds!
Storage & Serving Ideas
- 🧊 Put it in an airtight container in the fridge for up to two days. It could separate a little, but just stir it before you eat it.
