Ingredients for Blueberry Pie Overnight Oats

For the Oats:

  • ½ cup of rolled oats
  • ½ cup of milk (dairy or non-dairy)
  • ¼ cup of Greek yogurt (to make it creamy)
  • 1 tablespoon of chia seeds (to make it thicker)
  • ½ teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon
  • ½ tablespoon of honey or maple syrup

For the blueberry compote:

  • ½ cup of blueberries, fresh or frozen
  • ½ tablespoon of maple syrup
  • ½ teaspoon of lemon juice
  • 1 tablespoon of water

For toppings (optional but tasty!):

  • Graham crackers that have been crushed
  • Blueberries that are extra fresh
  • A little bit of honey or nut butter

Instructions

  1. First, make the blueberry compote.
    Put blueberries, maple syrup, lemon juice, and water in a small saucepan. Cook for 5 to 7 minutes over low heat, stirring every so often, until the blueberries pop and the sauce gets thicker. Let it cool.

  2. Combine the Oats Base
    Put rolled oats, milk, Greek yogurt, chia seeds, vanilla essence, cinnamon, and maple syrup in a mason jar and stir them together. Mix well.
  3. Put the Oats and Blueberry Compote on top of each other.
    Put half of the oat mixture in the jar, then add a layer of blueberry compote, and last, add the rest of the oats.
  4. Put a lid on it and chill it overnight.
    Close the jar and put it in the fridge overnight (or at least four hours) so the oats can soak up the flavors.
  5. Add toppings and serve
    Before serving, stir the oats in the morning and add crushed graham crackers, more blueberries, and a little honey.
