Last Sunday, I thought of this recipe. I wanted cinnamon rolls while I was preparing protein crepes.I still wanted crepes, though, so I made cinnamon roll crepes. Or I should say, cinnamon protein crepes.

I think these cinnamon protein crepe rolls are one of my all-time favorite breakfasts. And I really mean it when I say it!

They taste like dessert, for real. These crepes are so bad for you that you’ll never think they’re healthful and high in protein.
You don’t need protein powder for this recipe because it provides 40 grams of protein.Do you want to know how? My protein crepe recipe doesn’t utilize protein powder; it uses egg whites and Greek yogurt instead. You may obtain these two lean protein sources at any grocery shop.

Things you need

You won’t even need protein powder to make these cinnamon protein crepe rolls. You can readily find all the ingredients for the crepe rolls, the filling, and the topping at any grocery shop.

This is everything you need for this crepe roll recipe.

  • Flour made from oats (or any other flour)
  • Eggs and egg whites
  • Honey or maple syrup

You only need Greek yogurt, a granular sweetener (I use erythritol), and ground cinnamon for the filling. You can use any other yogurt instead of the Greek yogurt, as long as it doesn’t include dairy in it.

Lastly, the topping that doesn’t have any sugar in it is just cinnamon and granulated sweetener.

How to create protein crepes with cinnamon rolls

  1. In a bowl, mix together the oat flour, maple syrup, egg, and egg whites to make the protein crepes. Mix everything together well until the batter is smooth and there are no lumps.
  2. Put a little oil or butter in a medium nonstick skillet or crepe pan and heat it over medium heat.
  3. Put 1/3 cup of crepes batter on the pan and turn the skillet in a circle to spread the batter out evenly.
  4. Cook for 1 to 2 minutes over medium heat, then turn.

Filling of Cinnamon Yogurt

  1. Mix Greek yogurt, granular sugar, and ground cinnamon to make the filling.
  2. Spread the cinnamon “sugar” filling over each crepe when it’s finished, then roll them up.

Cinnamon Sugar Without Sugar

  1. Lastly, mix the sweetener and cinnamon together to produce the topping.
  2. Enjoy by sprinkling on top of the protein crepe rolls!

If you read these tips, you’ll make the softest and tastiest protein crepe rolls ever!

  • Add roughly half a teaspoon of vanilla extract to the batter to make the protein crepes taste better.
  • Egg whites are very useful in masonry.
  • If you mix the protein batter in a food processor, you won’t have any lumps in the crepes.
  • Don’t cook the crepes too long if you want them to be tender. The longer you cook them, the drier they will be.
  • If the Greek yogurt filling is too thick, add a little bit of your preferred milk to smooth it out.
