  • ½ cup of cottage cheese
  • 2 tablespoons of almond or peanut butter
  • 1 tablespoon of honey or maple syrup
  • ½ tsp of vanilla extract
  • 1/3 cup of oat flour
  • ¼ teaspoon of cinnamon (optional, but tasty!)
  • ¼ cup of small chocolate chips

  1. Blend the cottage cheese in a blender until it is smooth and creamy.
  2. Put the blended cottage cheese in a bowl and add the peanut butter, honey, and vanilla extract. Mix well until everything is mixed in.
  3. Mix in the oat flour and cinnamon until the dough is thick.
  4. Add the mini chocolate chips and stir them in gently.
  5. Spoon into a bowl, put more chocolate chips on top, and eat right away!

Tips & Notes

  • Mix well to get a smooth texture! Blend until smooth if you don’t like the curds in cottage cheese.
  • It is safe to eat raw because it has oat flour in it. You can also use flour made from almonds or coconuts.
  • Want it to be thicker? Put in one more spoonful of oat flour.
  • To make it nut-free, use sunflower seed butter instead of nut butter.
  • Put leftovers in the fridge; the next day they taste even better!
  • You can keep it in the fridge for up to three days.
  • You can eat it straight from the fridge or let it sit for a few minutes to make it softer.
