These No-Bake Peanut Butter Oat Cups are a healthy, quick dessert made with just a few ingredients. Perfect for a snack or dessert, they combine creamy peanut butter, oats, and a touch of chocolate for a satisfying treat with no baking required. Great for busy days when you need something sweet and nutritious!

Ingredients

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips (optional for topping)
  • 1/2 tsp vanilla extract (optional)
  • Pinch of salt (if using unsalted peanut butter)

Directions

  1. Prepare the Mixture:
  • In a mixing bowl, combine the oats, peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until everything is well mixed and sticky.
  1. Form the Cups:
  • Spoon the mixture into a mini muffin tin, pressing firmly to form cups. For easy removal, line the tin with cupcake liners or use a silicone muffin tray.
  1. Add Chocolate Topping (Optional):
  • Melt the chocolate chips in a microwave-safe bowl in 15-second intervals, stirring in between, until smooth. Drizzle or spread a little melted chocolate on top of each oat cup.
  1. Chill and Serve:
  • Place the muffin tin in the fridge for at least 1 hour to allow the cups to firm up. Once set, remove from the tin and enjoy!

Note

  • Storage: Store in an airtight container in the fridge for up to a week or in the freezer for longer storage.
  • Add-Ins: Try adding shredded coconut, chia seeds, or crushed nuts for extra texture and nutrition.
  • Nut Butter Alternatives: Substitute peanut butter with almond or cashew butter if preferred.
