Notes and Shopping Ideas
Here are some notes and shopping ideas for the things you’ll need. See the print-friendly recipe card below for the full proportions.
- Broccoli. I use either one tiny head of broccoli or a bag of pre-washed florets that weighs 10 to 12 ounces. It’s fine if it’s a bit more or less. Cut into small, even pieces so that it cooks quickly and evenly.
- A pound of lean ground beef or ground sirloin. ButcherBox is still my favorite place to shop.
- Soy sauce with little salt and either light or dark brown sugar. The sauce’s basis.
- Sesame oil that has been toasted. So much taste in such a small space!
- Freshly minced garlic.
- Ginger that has been ground. Adding just a quarter teaspoon of ground ginger to the sauce gives it a lot of flavor with very little work. If you have it, you may definitely use 1–2 tablespoons of chopped or shredded fresh ginger instead.
- Oil from olives. Canola oil, avocado oil, vegetable oil, and other oils are all good substitutes.
- Black and red pepper.
- Optional but nice toppings are sesame seeds and green onions.
Optional Changes
- Instead of ground beef, use ground chicken or turkey. If you use one of these leaner meats, add a little more cooking oil to the skillet after taking out the broccoli and before adding the meat.
- You can add or replace the broccoli with snow peas, mushrooms, zucchini, shredded carrots, or bell peppers. Any vegetable that cooks in a short amount of time.
- To make it hotter, add a little Sriracha or your preferred hot sauce, either blended in with the sauce or drizzled on top of each bowl.
Directions
- In a big skillet over medium-high heat, heat the olive oil. Add the broccoli to the oil and cook it for 3 to 4 minutes, stirring it often, until it is bright green and has a tender-crisp texture. Take it off the heat and put it on a plate.
3 to 4 cups of broccoli florets and 1 tablespoon of olive oil
- Put the garlic and ground beef in the skillet. Break it up into little pieces while you cook it for 5 to 6 minutes, or until it is mostly brown. Get rid of the extra fat by draining it or using a paper towel to soak it up.
1 pound of lean ground beef and 2 to 3 cloves of garlic
- While the beef is cooking, mix together soy sauce, brown sugar, toasted sesame oil, ginger, and red and black pepper in a small bowl or measuring cup. Until smooth, whisk.
1/4 cup of low-sodium soy sauce, 1/4 cup of brown sugar, 2 teaspoons of toasted sesame oil, 1/4 teaspoon of ground ginger, 1/4 teaspoon of red pepper flakes, and 8 to 10 cranks of freshly ground black pepper

- Pour in the sauce as soon as the beef is brown. Cook for another 2 to 3 minutes, or until the sauce thickens a little. Put the broccoli back in the pan and toss it to coat. Add salt to taste and serve immediately away over rice or noodles. Add sesame seeds on top if you want.

Serving Suggestions and Leftovers
After it’s done cooking, put this ground beef and broccoli on top of rice (white, brown, cauliflower, or any other kind) or noodles of your choice. Thick, bumpy udon noodles and thin rice noodles both taste great. If your family enjoys them, even regular egg noodles will work. You can offer rice or noodles if you want.
Sesame seeds and finely sliced green onions make a pretty garnish that adds color.
Ground beef with broccoli stays fresh and reheats well. This is largely because the meat and sauce combination keeps leftovers from drying out.
Extra servings stay good for 3 to 4 days in the fridge. Put it in the fridge in any container that won’t let air in. (These are the meal prep boxes we like best!) To reheat, put it in the microwave or a small saucepan over medium-low heat. If you really need to, add a very small amount of broth or water to make the mixture less sticky. You don’t want to make the sauce too thin.
This Ground Beef and Broccoli recipe is very simple, very quick, and very tasty. It only needs one pan and can be on your table in 20 minutes. For a simple but filling dinner, serve over rice or noodles.
