It’s simple to make these garlic butter steak bits with potatoes, and they cook in less than 20 minutes! The steak bites are really soft, and the potatoes get a gorgeous golden brown right in the pan.

I really like steak. But I don’t prepare steak very often because it’s a little more work. The answer? Bites of steak!

I made my Healthy Beef and Broccoli Stir Fry over and over again, so I wanted to try other ways to cook steak in the skillet. It turns out that cooking delicious, succulent steak bites in just a few minutes is quite easy! I love this approach of making steak because it’s quick and the searing doesn’t ruin the dish.

The ingredients are simple, but the garlic and butter make this meal taste amazing. If you can’t handle lactose, use ghee instead of butter to make your meal paleo-friendly. I know you’ll love this recipe for garlic butter steak pieces with potatoes as much as I do. We eat it every weeknight in one pan, and the kids adore it!

  • ¼ cup of ghee or butter, split
  • 1 tablespoon of olive oil
  • 1 pound of Yukon Gold potatoes, cut into 1/2-inch pieces.
  • Three cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • ½ teaspoon of dried oregano
  • ½ teaspoon of sea salt, plus more to taste
  • ¼ teaspoon of ground black pepper, plus more to taste
  • 1 ¼ pounds of sirloin steak, cut into pieces that are ½ inch thick
  • Parsley, finely chopped, for garnish

Don’t have any Yukon Gold potatoes? You can use any kind of little potato, such as yellow, red, or fingerling potatoes.

This recipe works with any tender steak, like ribeye, sirloin, strip, or beef tenderloin.

You can use any other dry herbs instead of thyme or oregano, such as rosemary, basil, or parsley.

Instructions

  1. To get ready, heat a big cast iron skillet over medium heat. Put the olive oil and two tablespoons of ghee in the pan.
  2. Add the potatoes to the pan after the ghee has melted. Then, sprinkle the garlic, thyme, oregano, salt, and pepper over the potatoes. Before you stir the potatoes, cook them for 2 to 3 minutes.
    Potatoes cooking in the pan, golden and seasoned Stir the potatoes and cook them for 8 to 10 minutes, or until they are golden brown and soft enough to pierce with a fork. If the potatoes are too close together in the pan or if your potato chunks are bigger, this will take longer. To keep them from sticking, stir them every 1 to 2 minutes. Take the potatoes and the browned portions out of the pan and put them to the side.
  3. To sear the steak, turn the heat up to medium-high and add the last two tablespoons of ghee to the pan. Add the steak pieces and a little salt and pepper once the butter has melted. Stir the steak pieces after they have been cooking for at least 2 minutes. You want to make sure they get a decent sear. Stir and keep cooking for 1 to 2 minutes, or until the food is golden brown.
  4. Put the potatoes back in the pan and toss to mix them in. Add extra salt and pepper to taste. Add finely chopped parsley on the top. Serve and enjoy!

Tips & Notes

You can use various types of little potatoes in this dish, such as yellow, red, or fingerling potatoes.

Cut the potatoes into tiny, even pieces. It will help them cook faster.

A cast iron pan is the greatest way to get the steak browned and the potatoes crispy.

Don’t give in to the impulse to mess with the meat. Before stirring, let the pieces of steak sear and turn golden.

When you sear the meat, use a splatter screen to keep the mess to a minimum.

Storage & Reheating

TO STORE: Put any leftovers in an airtight jar in the fridge for up to five days.

TO FREEZE: Let the mixture cool to room temperature, then put the steak bits and potatoes in a zip-top storage bag or an airtight container that is safe for the freezer. It can stay in the freezer for up to three months. Before reheating, let it thaw in the fridge.

TO REHEAT: I suggest reheating in the skillet with a little extra ghee over medium heat until warm for the best texture. You may also heat it up in the microwave for 15 to 20 seconds at a time until it’s warm.

Serving Suggestions

This recipe is fantastic on its own because it has steak and garlic butter potatoes in it. If you want to serve it with something else, I suggest a simple vegetable like roasted asparagus or a salad on the side.
